Avocado Bread

I impulsively decided to try the avocado bread recipe from this video, and here's the result!



Delightfully, it is in fact green on the inside! (Slightly greener than it looks in the photo – about the color of your average pistachio ice cream.) I'd call it a moderate success: tasted decent, if a little dry, but I don't really anticipate making it again. Part of the difficulty was that the recipe calls for two "very ripe" avocados, but it's early March and I live in New York, so the ripest avocados I could find were still approximately the consistency of bricks....

The only source of fat in this recipe is the avocados themselves – no butter or oil.

Recipe:

Ingredients:
2 avocados (very ripe)
3/4c sugar
3 eggs
2c flour
1.5tsp baking powder

Directions:
Cream avocados and sugar, then add eggs. Mix flour and baking powder in separate bowl. Add dry ingredients to avocado mixture, beat until combined. Bake in loaf pan at 350°F (180°C) for about 45 minutes.

You can also use ripe avocados to make a very rich ice cream! Truly a glorious fruit!
